SAUSAGE MUSHROOM AND BASIL SAUTE

2 Sausage, removed from casing or sliced into medallions if pre-cooked
1 Carton of white or cremini mushrooms (about 8-9), sliced
1 small onion, cut into thin ribbons
1 handful of basil leaves (about 9-10), roughly torn
1 tbsp olive oil
In a saute pan over medium heat, add the olive oil and onions. Saute the onions for about 5 minutes until soft.
Add in the sausage and saute for another 3-5 minutes. Add the mushroom and cook for 5 minutes longer.
Lastly add the torn basil and stir in for 1-2 minutes, just till its wilted. Serve over cauliflower mash or baby spinach leaves and top with more fresh basil if you like.
