Grilled Sausage and Summer Squash

2 sausage links

2 large summer squash or zuchinni sliced into rings

2 cloves garlic minced

8 cherry tomatoes halved

7-9 basil leaves torn

1 tbsp olive oil


On your grill or grill pan on medium heat, cook the sausage 6-7 minutes on each side. While the sausage is cooking heat up your olive oil in a large saute pan over medium heat.

Add garlic and cook for 1 minute, then add the squash and saute for about 7 minutes until slightly softened. You don't want to overcook it.

Next add in the sliced cherry tomatoes and stir until they release a bit of their juice, around 2-3 minutes. Now turn off the heat and stir in the basil until wilted

When the sausage is done, allow to cool for 3 minutes, then slice into bite size pieces. Plate the veggies first then top with the sliced sausage. Feel free to add more basil. I find this dish doesn't need salt or pepper because the sausage is so flavorful.
